Wondering which wine will make your favorite dish even better? We've got a few delicious ideas.

There’s something about this time of year that brings everyone back to the table. The weather turns cooler, the recipes get a little richer, and suddenly, Sunday supper becomes something to look forward to all week.

At Signor, we believe some of the best occasions are the ones that happen around our own dinner tables. A familiar recipe, a bottle you've been saving, and good company with nowhere else to be.

With the holidays approaching, we're sharing a few of our favorite food and wine pairings, beginning with a Southern comfort food classic that makes a particularly good companion to our Texas Tempranillo.

*** The Easiest Dinner You'll Ever Brag About

Mississippi Pot Roast + 2023 Tempranillo | Dell Valley, Texas

Few things say welcome home quite like a roast that's been cooking all afternoon.

Mississippi Pot Roast has earned its place in Southern kitchens for good reason. It's rich, buttery, a little tangy, and remarkably easy to make. A handful of ingredients, a slow cooker, and a little patience are all it takes.

Our 2023 Tempranillo is a wonderful match. Aged for 24 months in French oak, this Texas-grown red brings notes of dark berries, mocha, leather, and tobacco to the table. Its smoky, savory character complements the richness of the beef, while the wine's structure helps balance the buttery sauce.

Recipe: Mississippi Pot Roast

Serves: 6–8Prep Time: 10 minutesCook Time: 8–9 hours on low

Ingredients

  • 4 lb chuck roast

  • 1 packet ranch dressing mix

  • 1 packet onoin soup mix (lipton brand)

  • ½ cup unsalted butter (1 stick)

  • 6–8 pepperoncini peppers

  • 1 cup of water

  • Salt and pepper, to taste

  • Mashed potatoes or buttered egg noodles, for serving

Directions

  1. Place the chuck roast in your slow cooker. Sprinkle the ranch seasoning and onion mix evenly over the meat.

  2. Add the good stuff. Set the butter on top, add the pepperoncini peppers, and 1 cup of water.

  3. Let time do its work. Cover and cook on low for 8–9 hours, or until the beef is tender enough to pull apart with a fork.

  4. Bring it all together. Shred the beef directly into its cooking juices, stirring to coat every bite in the rich, savory sauce.

  5. Gather around. Serve over mashed potatoes or buttered egg noodles, with a generous spoonful of the cooking juices.

A little something extra: Serve with roasted carrots, warm crusty bread, or green beans. And, of course, a glass of Signor Tempranillo.

A Little More Inspiration

for the holiday

2024 Roussanne | Rogue Valley, Oregon + Roasted turkey, herb dressing, butternut squash, and creamy cheeses.

With notes of white peach, guava, and apricot, this beautifully textured white has the richness to complement a holiday meal and the freshness to balance its savory favorites. A lovely choice when the entire table is passing plates.

the first pour

Sparkling Rosé | California+ Baked Brie, prosciutto, smoked salmon, and fresh strawberries.

Bright red fruit, lively bubbles, and a refreshing finish make our Sparkling Rosé a natural companion for the first course. Bring out the appetizers, put on a little music, and let the evening unfold.

Coastal inspired dishes

2025 Picpoul Blanc | Texas High Plains+ Fresh oysters, shrimp cocktail, crab cakes, and goat cheese.

Crisp citrus, green apple, and melon give this Texas white its refreshing character. Its bright acidity makes it especially good alongside seafood, from chilled shrimp before dinner to a platter of fresh oysters.

For the Sunday Roast

2022 Cabernet Sauvignon | Rogue Valley, Oregon + Beef tenderloin, grilled ribeye, rosemary potatoes, and aged cheddar.

Blackberry, black cherry, and warm spice meet a full-bodied structure and lingering finish. A beautiful bottle for richer cuts of beef, especially when the occasion calls for bringing out the good dishes.

Rich & Savory

2022 Mozzafiato | Rogue Valley, Oregon + Herb-roasted lamb, mushroom risotto, braised short ribs, and aged Gouda.

Ripe cherry, blackberry, plum, and a hint of spice make Mozzafiato a wonderful companion to rich, savory dishes. Its smooth finish pairs especially well with roasted meats and earthy mushrooms.

The art of pairing

A great wine pairing doesn't have to be complicated. Sometimes it's as simple as knowing which bottle to reach for when dinner is on the stove.

Whether you're planning the holiday menu, hosting friends for the weekend, or making your family's favorite Sunday supper, we hope these pairings bring a little inspiration to your table.

From our vineyard to yours, here's to good food, beautiful wine, and making a little more time for the people around the table.
